Recipes FAQ

Can I use fresh clams instead of canned?

Yes, you can. If you're using fresh clams, you'll need about 2 pounds of clams. Scrub and rinse them well, then cook them in a pot with 1 cup of water until they open. Remove the clams from the pot and chop them. Strain the clam broth and use it instead of chicken broth in the recipe.

Can I freeze clam chowder?

You can freeze clam chowder, but it's not recommended. The texture of the potatoes and milk might change when you reheat it. If you do freeze it, make sure to store it in an airtight container and consume it within 3 months.

Recipe Tips

  • Use russet potatoes for the best texture.
  • Don't overcook the potatoes, or they'll turn mushy.
  • For a spicier chowder, add some cayenne pepper or red pepper flakes.
  • You can use half-and-half instead of evaporated milk for a lighter soup.
