For the chicken:- 4 boneless, skinless chicken breasts
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup breadcrumbs
- 1 tablespoon chopped fresh parsley
- 1 tablespoon chopped fresh basil
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1/4 cup all-purpose flour
- 1/4 cup butter
- 1 cup chicken broth
- 1 cup marsala wine
- Salt and pepper to taste
- 1 tablespoon chopped fresh parsley

Method
1. Preheat your oven to 375°F. 2. In a medium bowl, mix together the mozzarella cheese, Parmesan cheese, breadcrumbs, parsley, basil, garlic powder, salt, and pepper. 3. Butterfly each chicken breast by cutting it horizontally through the center, but not all the way through. Open the chicken breast like a book and lay it flat. 4. Place a heaping tablespoon of the cheese mixture on one side of the chicken breast, then fold the other side over to create a “pocket” of cheese. Secure the chicken with toothpicks. 5. Heat a large skillet over medium-high heat. Add the chicken and cook for 3-4 minutes on each side, or until golden brown. 6. Transfer the chicken to a baking dish and bake for 20-25 minutes, or until the chicken is cooked through. 7. While the chicken is baking, make the sauce. In the same skillet used to cook the chicken, melt the butter over medium heat. Add the flour and whisk until smooth. 8. Gradually whisk in the chicken broth and marsala wine. Cook the sauce for about 5 minutes, or until it thickens. 9. Season the sauce with salt, pepper, and parsley. 10. Remove the toothpicks from the chicken and serve with the marsala sauce.Notes
