Method

1. Preheat the oven to 375°F and grease a muffin tin. 2. In a large mixing bowl, combine the whole wheat flour, baking powder, baking soda, and salt. Whisk together until well combined. 3. In another mixing bowl, whisk together the honey and melted coconut oil until well combined. 4. Add the eggs and vanilla extract to the honey and coconut oil mixture and whisk until smooth. 5. Pour the wet ingredients into the dry ingredients and mix until just combined. 6. Add the almond milk and mix until just combined. 7. Fold in the blueberries. 8. Spoon the batter into the prepared muffin tin, filling each muffin cup about 2/3 full. 9. Bake for 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean. 10. Let the muffins cool for a few minutes in the muffin tin before transferring them to a wire rack to cool completely.
