Description

Dhokla is a popular Indian snack that is loved by everyone. It is a steamed and fluffy cake made from gram flour and is usually served with green chutney. Traditionally, dhokla is made in a special dhokla maker or steamer. However, you can easily make it in a pressure cooker at home with this easy recipe.

Ingredients

  • 1 cup gram flour (besan)
  • 1/2 cup yogurt (dahi)
  • 1/2 cup water
  • 1 tsp ginger paste
  • 1 tsp green chili paste
  • 1 tsp sugar
  • 1 tsp lemon juice
  • 1/2 tsp turmeric powder (haldi)
  • 1 tsp Eno fruit salt
  • Salt to taste
  • 2 tbsp oil
  • 1 tsp mustard seeds (rai)
  • 1 tsp sesame seeds (til)
  • A pinch of asafoetida (hing)
  • 2-3 green chilies, slit lengthwise
  • A few curry leaves

Equipment

  • Pressure cooker
  • Trivet or stand to keep the dhokla plate
  • Dhokla plate or any flat plate that fits in the pressure cooker
  • Mixing bowl
  • Whisk
  • Knife
  • Chopping board
  • Small pan

Method

  1. In a mixing bowl, add gram flour, yogurt, water, ginger paste, green chili paste, sugar, lemon juice, turmeric powder, and salt. Whisk well to form a smooth batter.
  2. Add Eno fruit salt to the batter and mix gently. The batter will become bubbly and frothy.
  3. Grease the dhokla plate with oil and pour the batter into it. Smooth the surface with a spatula.
  4. Add 1-2 cups of water in the pressure cooker and place a trivet or stand in it. Heat the water on medium flame.
  5. Once the water starts boiling, place the dhokla plate on the trivet or stand in the pressure cooker. Cover the pressure cooker with its lid but remove the whistle/weight.
  6. Steam the dhokla on medium flame for around 15-20 minutes or until a toothpick inserted in the center comes out clean.
  7. Turn off the flame and let the pressure release naturally for 5 minutes.
  8. In a small pan, heat oil and add mustard seeds. Once they crackle, add sesame seeds, asafoetida, green chilies, and curry leaves. Sauté for a few seconds and turn off the flame.
  9. Remove the dhokla plate from the pressure cooker and let it cool for a few minutes. Cut the dhokla into pieces and pour the tempering over it.
  10. Serve hot with green chutney.

Notes

  • You can also add a pinch of red chili powder for extra heat.
  • You can use any other vegetable oil instead of sesame oil.
  • Make sure to use fresh Eno fruit salt for best results.
