- 225g self-raising flour
- 55g butter, cut into small cubes
- 25g caster sugar
- 75g dried fruit (sultanas or raisins work well)
- 150ml milk
- 1 egg, beaten (for egg wash)

Method
- Preheat the oven to 220°C/200°C fan/gas mark 7.
- Sift the flour into a bowl and add the butter. Rub the butter into the flour with your fingertips until the mixture resembles breadcrumbs.
- Add the sugar and dried fruit and mix well.
- Make a well in the centre of the mixture and pour in the milk. Mix together with a knife until the mixture comes together into a dough.

- Roll out the dough to a thickness of about 2cm and use a pastry cutter or round cookie cutter to cut out scones.
- Place the scones onto a baking tray lined with parchment paper.
- Brush the tops of the scones with beaten egg to give them a golden colour.
- Bake in the preheated oven for 15-20 minutes until the scones are golden brown and risen.
- Remove from the oven and transfer to a cooling rack.
- Once cooled, serve with butter and jam or clotted cream and jam.
