Description

Scones are a classic British treat, perfect for afternoon tea or a weekend breakfast. This easy fruit scones recipe is a traditional version that is quick and simple to make, perfect for beginners or those short on time. With the addition of dried fruit, these scones are a little sweeter than plain scones, making them a delicious treat to enjoy with a cup of tea.

Ingredients

  • 225g self-raising flour
  • 55g butter, cut into small cubes
  • 25g caster sugar
  • 75g dried fruit (sultanas or raisins work well)
  • 150ml milk
  • 1 egg, beaten (for egg wash)

Equipment

  • Baking tray
  • Bowl
  • Cooling rack
  • Sieve
  • Parchment paper
  • Pastry cutter or round cookie cutter

Method

  1. Preheat the oven to 220°C/200°C fan/gas mark 7.
  2. Sift the flour into a bowl and add the butter. Rub the butter into the flour with your fingertips until the mixture resembles breadcrumbs.
  3. Add the sugar and dried fruit and mix well.
  4. Make a well in the centre of the mixture and pour in the milk. Mix together with a knife until the mixture comes together into a dough.
  5. Turn the dough onto a floured surface and knead lightly until it comes together into a smooth ball.
  6. Roll out the dough to a thickness of about 2cm and use a pastry cutter or round cookie cutter to cut out scones.
  7. Place the scones onto a baking tray lined with parchment paper.
  8. Brush the tops of the scones with beaten egg to give them a golden colour.
  9. Bake in the preheated oven for 15-20 minutes until the scones are golden brown and risen.
  10. Remove from the oven and transfer to a cooling rack.
  11. Once cooled, serve with butter and jam or clotted cream and jam.

Notes

These scones are best eaten on the day they are made, but can be stored in an airtight container for up to 2 days. They can also be frozen for up to 3 months – simply defrost and reheat in the oven for a few minutes before serving.
