Ingredients

  • 500g white fish fillets, such as cod or haddock
  • 300g smoked haddock fillets
  • 400g potatoes, peeled and diced
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 150g frozen peas
  • 150g frozen sweetcorn
  • 500ml milk
  • 50g butter
  • 50g plain flour
  • 1 tbsp chopped parsley
  • Salt and pepper to taste

Method

  1. Preheat the oven to 200°C/180°C fan/gas mark 6.
  2. Boil the potatoes in a large saucepan for around 15 minutes or until they are soft. Drain and mash with a little butter and milk until smooth. Set aside.
  3. Meanwhile, poach the fish in a large saucepan with the milk for around 10 minutes or until the fish is cooked through. Remove the fish from the milk and set aside to cool.
  4. Melt the butter in a frying pan over medium heat. Add the onion and garlic and cook for around 5 minutes or until the onion is softened.
  5. Add the flour to the frying pan and whisk together until the mixture becomes a paste. Gradually add the poaching milk, whisking constantly until the mixture is smooth and thickened.
  6. Add the peas, sweetcorn and parsley to the frying pan and stir well to combine.
  7. Flake the cooled fish into the frying pan and stir gently to combine with the vegetable mixture.
  8. Spoon the fish mixture into a baking dish and spread the mashed potato over the top, using a fork to create a decorative pattern.
  9. Bake in the oven for around 20 minutes or until the top is golden brown and crispy.
  10. Remove from the oven and allow to cool for a few minutes before serving.

  • This recipe can be easily adapted to include other types of fish, such as salmon or prawns.
  • If you prefer a creamier sauce, you can substitute some of the milk for cream.
