- 500g white fish fillets, such as cod or haddock
- 300g smoked haddock fillets
- 400g potatoes, peeled and diced
- 1 large onion, chopped
- 2 cloves garlic, minced
- 150g frozen peas
- 150g frozen sweetcorn
- 500ml milk
- 50g butter
- 50g plain flour
- 1 tbsp chopped parsley
- Salt and pepper to taste

Method
- Preheat the oven to 200°C/180°C fan/gas mark 6.
- Boil the potatoes in a large saucepan for around 15 minutes or until they are soft. Drain and mash with a little butter and milk until smooth. Set aside.
- Meanwhile, poach the fish in a large saucepan with the milk for around 10 minutes or until the fish is cooked through. Remove the fish from the milk and set aside to cool.
- Melt the butter in a frying pan over medium heat. Add the onion and garlic and cook for around 5 minutes or until the onion is softened.
- Add the flour to the frying pan and whisk together until the mixture becomes a paste. Gradually add the poaching milk, whisking constantly until the mixture is smooth and thickened.
- Add the peas, sweetcorn and parsley to the frying pan and stir well to combine.
- Flake the cooled fish into the frying pan and stir gently to combine with the vegetable mixture.
- Spoon the fish mixture into a baking dish and spread the mashed potato over the top, using a fork to create a decorative pattern.
- Bake in the oven for around 20 minutes or until the top is golden brown and crispy.
- Remove from the oven and allow to cool for a few minutes before serving.

- This recipe can be easily adapted to include other types of fish, such as salmon or prawns.
- If you prefer a creamier sauce, you can substitute some of the milk for cream.
