  • 1 pound andouille sausage, sliced
  • 1 pound chicken thighs, boneless and skinless, cut into bite-sized pieces
  • 1 pound shrimp, peeled and deveined
  • 2 cups cooked white rice
  • Chopped green onions, for garnish

Method

  1. Heat the vegetable oil in a large Dutch oven or pot over medium heat.

  6. Add the sliced andouille sausage and chicken thighs to the pot and bring the mixture to a boil.
  7. Reduce the heat to low and let the gumbo simmer for about 1 hour or until the chicken is cooked through.
  8. After 1 hour, add the shrimp to the pot and cook for an additional 5-7 minutes or until the shrimp are pink and cooked through.
  9. Serve the gumbo over cooked white rice and garnish with chopped green onions.
