- 4 medium-sized beets, peeled and chopped
- 4 cups of vegetable broth

- 1 tablespoon of olive oil
- 1 tablespoon of white vinegar
- Salt and pepper to taste

Method
- Heat olive oil in a large soup pot over medium heat.
- Add onion and garlic, and sauté for 5 minutes or until the onion is translucent.
- Add chopped beets, carrots, potatoes, and cabbage to the pot, and stir to combine.
- Add vegetable broth, and bring to a boil. Reduce heat and let simmer for 30 minutes or until vegetables are tender.
- Add white vinegar, salt, and pepper to taste.
- Use an immersion blender to blend the soup until it's smooth, or transfer to a blender and blend in batches.
- Serve hot, topped with sour cream or yogurt, and fresh herbs like dill or parsley.
Notes
